These chewy bites are incredibly moist, satisfing and perfect for the kids lunchbox. Sweetened with only a little honey mostly using raisins and a banana to sweeten the biscuits in a healthier and more creative way! Simple. Wholesome. Cheap. As we are busy bees now days easy nutrient rich treats are important. This recipe is Gluten, re-fined sugar, egg and Dairy free so great to take to events or get togethers at which your unsure of others dietary requirements. I made my own peanut butter for this recipe and I will pop a link below for a simple recipe so you can make your own also if desired.
2 cups oats
2 tbsp Raw Honey, Maple or coconut nectar
2 Tbsp softened butter or coconut oil (for dairy free)
3 Tbsp Peanut butter
1/2 cup raisins
1 mashed banana
2 tsp ginger
1/2 tsp baking soda
Preheat oven to 180°C
Simply mix together in a bowl (or in a processor) butter, honey, mashed banana and peanut butter.
Add the rest of the ingredients and stir till just combined.
Roll tsp of mixture into balls then place onto a prepared baking tray. Press down with the back of a spoon or fork.
Bake for 7-10mins - will easily dry out and become dry so try not to leave in oven for to long. Its ok if they are still a little raw thats he texture your after.
