If its earthy, wholesome and real I'm in love! This loaf is using the fruits off the trees that are in season on the farm, feijoas and apples. You could also use any other in season fruit for instance peaches would be delicious! Using honey to sweeten and ground almonds and brown rice flour to make this loaf a gluten free option its moist with devine texture. Great for an afternoon pick me up, breakfast or for the school lunch box it's nutritious and easy to prepare.

1 cup ground almonds
1 cup brown rice flour
3 peeled and roughly chopped feijoas
2 free range eggs
1/3 cup coconut oil
1/3 cup raw honey
1 tsp baking soda
Tablespoon of Apple cider vinegar
1 apple thinly sliced for the top of cake
Preheat oven to 180°C
In a processor add the honey, coconut oil and eggs pulse till combined then add in the dry ingredients along with the apple cider vinegar and blend until combined. Fold in feijoas then pour into a lined or greased loaf tin.
Line top of loaf with sliced apples
Bake for 40 -45 minutes or until a skewer inserted comes out clean.
