A crumble can be prepared with any in season fruit through out the year but for this recipe I have used new season apples and sweet, juicy plums sweetened this recipe with coconut sugar for an incredibly healthy dessert. I love the left over’s for breakfast served with fresh un-sweetened yoghurt.
2 apples- peeled and cut into wedges
5 plums, de-piped
2 Tbsp coconut sugar/ raw honey
1 cup oats
1/2 cup ground nuts (almonds are a favorite)
1/4 cup mixed seeds (you can choose from pumpkin seeds, sunflower, sesame, flaxseeds, chia seeds etc)
1/4 cup mixed nuts (almonds, hazelnuts, walnuts etc)
50g softened butter or melted coconut oil
1/3 cup coconut sugar or raw honey
Preheat oven to 180°C
Line the bottom of a baking dish with your fruit and mix through your coconut sugar/ raw honey. In a separate bowl add your muesli ingredients and with your fingertips rub through the butter/ coconut oil and sweetener. Evenly scatter on top of your fruit and place in the oven.
Bake for 20-25 minutes or until the fruit juices start to bubble up from the bottom.
