1/2 cup organic flour or spelt flour
1/2 cup desiccated coconut
1 cup quick cook oats
1/4 cup coconut sugar
1/4 cup honey
1/2 cup coconut oil-melted or 100g butter-melted
1 tsp baking soda
1 Tbsp apple cider vinegar
1/2 tsp vanilla extract
Preheat oven to 180°C and line a shallow baking dish with baking paper
In a processor combine all the ingredients and blend only until just incorporated.
Press the mixture evenly into your shallow baking dish then bake for 15-20 minutes or until golden brown. Allow to cool slightly then cut the bars while still quite hot and soft otherwise the mixture will become to hard. Store in an airtight container for up to a week.
